Dog Cookies




  • Preheat oven to 375 degrees

  • ¾ cup light brown sugar
  • ¼ cup granulated sugar
  • 9 tablespoons butter, softened
  • 1 large egg
  • ⅔ cup peanut butter
  • 2 cups all-purpose flour (more if needed)
  • 1 teaspoon baking soda
  • ¾ teaspoon baking powder
  • ¼ teaspoon salt
Cream butter and sugars together in stand mixer.  Add peanut butter and egg to mixture and mix until smooth.  Add flour, baking soda, baking powder and salt.  Roll out to use a cookie cutter or roll into balls and press with the bottom of a glass.  Bake at 375 for 10 - 12 minutes.  Let cool.

Dog Birthday Cake

  • Preheat oven to 350 degrees

  • 3/4 cup flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1 large egg
  • 2 tablespoons peanut butter
  • 2 tablespoons oil
  • 1/4 cup applesauce unsweetened, or pumpkin or bananas
  • 2 tablespoons honey

Bake in a 6 inch pan for 20 - 30 minutes

Use whipped cream for frosting.  

I didn't have applesauce so I peeled and cored 2 apples and put them in the food processor with the peanut butter and oil and after combined I added the eggs and processed again just to combine.  

Brownie Bites

  • 10 tablespoons unsalted butter
  • 1 1/4 cups white sugar
  • 3/4 cup unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • 1/2 cup all purpose flour
  • 1/2 cup mini chocolate chips

INSTRUCTIONS
 

Preheat oven to 350 degrees and spray a mini cupcake tin with non-stick baking spray.

Melt the butter in a bowl in the microwave. After the butter melts, add the sugar, cocoa powder and salt, mix until smooth. 

Add the vanilla and eggs and stir.  Add the flour and mini chocolate chips until all is combined.

Using a spoon, scoop the brownie mixture into the mini cupcake tins and bake for 12-15 minutes. 

After they have cooled a little, run a spoon along the edge of the brownie bites until you can tell they no longer stick to the pan.   Let them cool completely and remove from pan.

Upside Down Cake

 Upside Down Cake


3/4 C Butter

3/4 C Brown Sugar

1 1/2 C All Purpose Flour

2 TSP Baking Powder

1/4 TSP Salt

1 C Sugar

1 TSP Vanilla

2 Eggs, separated

3/4 C Milk

1/4 TSP Cream of Tartar

Whipping Cream for serving

You can add slices of pineapple, orange or lemon to this recipe.  

Preheat the oven to 350. Melt 4 tablespoons of butter and add the brown sugar.  Once dissolved, pour this mixture in the bottom of round glass cake pan.  At this point you can add thin slices of the fruit.  Traditionally a half maraschino cherry is placed in the center of a pineapple slice.  This cake is really good with lemons.  

Whisk the flour, baking powder and salt together in a bowl.  In an electric mixer beat the egg whites with the cream of tartar until stiff peaks, set aside.  In the electric mixer, beat the sugar and 8 tablespoons of butter until combined and then beat in the vanilla and egg yolks.  Gently fold the egg whites into this mixture.  Pour mixture evenly over the fruit and brown sugar and bake for about 30 - 40 minutes.  Toothpick test okay.  Serve warm or at room temperature with whipped cream.  This cake sometimes will raise a little more than expected so it's best to place a cookie sheet under it.

Asian Salad Dressing

1 cup Mayonnaise
10 tbsp Rice Vinegar
4 tbsp Sugar
4 tbsp Sesame Oil
2 tbsp Soy Sauce
1/2 tsp Garlic Powder

Adjust to taste.  You can use less rice vinegar and less sugar to balance. 

Flour Tortillas


3 cups all purpose flour 
1 teaspoon salt 
1 teaspoon baking powder
1 cup hot water 
3 tablespoons vegetable oil 

Combine all ingredients and knead a little.  Let the dough rest for about 10 minutes.  Divide the dough into 12 pieces.  Roll them out with a rolling pin as thin as you can get.  Cook in a really hot pan until browned on both sides.

Sweet & Sour Sauce

1 cup orange juice or pineapple juice or a combination
3/4 cup packed brown sugar
1/3 cup rice vinegar
3 tablespoons ketchup
2 tablespoons soy sauce

Combine all in a saucepan and cook until dissolved.
Make a cornstarch slurry with a tablespoon or more of corn starch and water.  Mix well and whisk into the other ingredients.

Bacon Cheeseburger Soup

Bacon Cheeseburger Soup

4 tablespoons butter
1 pound ground beef (80/20) cooked and drained
1 cup diced onion
1 cup diced celery
6 cups beef broth
2 tablespoons flour (optional)
3-4 cups shredded cheddar cheese (I use Tillamook sharp cheddar)
1 cup half and half
8 ounces cream cheese
small can of tomatoes (optional)
½ cup chopped garlic dill pickles
1 pound of bacon, cooked – drained and chopped

salt and pepper to taste – the cheese adds a good amount of salt, garlic powder is always good too. 

Top with chopped tomatoes, chopped lettuce, cheddar cheese and bacon.
Place butter in stock pan, add onions and celery and cook until softened a little. 
Cook ground beef in a frying pan and drain. 
To the softened veggies, add the flour and cook until combined. 
Add the beef broth to the stock pot and when warmed add the cream cheese and tomatoes.
Add the ground beef, and the pickles.
