- 2 cups graham cracker crumbs)

granulated sugar
- 1/4 cup packed dark brown sugar
- 1/2 teaspoon
baking soda
- 1/8 teaspoon
salt
- 6 tablespoons butter softened
- 1 large egg, lightly beaten
- 1/2 teaspoon
vanilla extract
- 1/4 cup dark chocolate chips
- 1/4 cup mini marshmallows
Preheat oven to 350. Mix all ingredients in a stand mixer and roll into balls. Insert a marshmallow or two into the top of each ball as well as a couple of dark chocolate chips and flatten slightly. Bake for about 14 minutes. For a cookie that's not quite as soft, use a little less brown sugar and increase the granulated sugar.
