Preheat oven to 350 degrees. Sift flour, baking soda, and salt together.
Put sugars and lemon zest in the bowl of an electric mixer and mix to combine. Add butter and mix until fluffy. Add eggs one at a time and then add the lemon juice. On a lower speed, add the flour, baking soda and salt.
Don't over mix.
Scoop dough and leave room between for them to spread. Flatten slightly and brush with a slightly wet pastry brush and sprinkle tops with super fine sugar.
Bake cookies until golden, about 15 minutes.
