(The loaf shown above is Extra Sharp Cheddar Bread)
3 Cups Flour
3/4 tsp. yeast
1 1/4 tsp salt
1 1/2 cups warm water
Mix all ingredients in a bowl just until mixed.
Cover bowl with lid or plastic wrap and let set for about 18 hours.
Remove from bowl and put on floured surface adding flour as needed.
Fold into thirds and then thirds again and cover with towel dusted with flour.
Let proof about 1 1/2 hours.
Preheat cast iron dutch oven in 425 degree oven.
Place dough in dutch oven and cover with lid.
Bake for 25 to 30 minutes - remove lid for 8 -10 minutes.
Add cheese chunks before baking for extra flavor.
Might try putting a foil lining in the bottom of the pan -
